[illegible] Pudding 4 oz of ground rice, soure milk, white sugar. 3 oz the slice of Butter, & beat over the fire till it falls from the spoon - set it by till quite cold - then beet the yolks of 5 eggs one after the other & add to it - beat it a great deal take the whites of the Eggs & beet them till a strong froth like snow., put it strongly to the rest the last thing - to be baked in a mould & the mould to be set in a pan of boiling water half way up the [neaclet?], then put into the [when?] Another [Gerucau?] Pudding Vanilla Pudding 2 spoons & a half of flour, added gradually to the yolks of 6 Eggs, well beaten, the peel of one lemon grated, a small quantity of Orange marmalade, cut quite fine & if you like some be pounded with 2 ozs of white sugar the juice of one lemon, & a pint of thick sour cream - stir altogether & beet the yolks of the Eggs to a strong strong froth & add to the
