Gilliy of Rasps & Corrances 16 Take yor corrance and boyle them with your hands, then take out the stalls & skins squee[z]ing the juce out then put it into a Linnen bag & squees out all the juce y.n put it in to y[or] pan and sett upon yor stove fire & lett it take a good boyl & scum it well. then take it of y.e fire & put it into yor bagg & hang it up to drian but mind at the frist coming out of y.e bagg will be thick y.n take some rasps & squees them throw a bagg put yor juce of rasps & juce of corrance into a pan & to every pint of juce put a pound of suggar y.o may put a Gill of juce of raspes to 3 Gills of y.e juce of corrance y.n lett it boyl till it will Gilley when cold y.o may try a little in a spoon mind & keep it scuming when the suggar is in. To stew Cowcumbers. 17 Take yor cowcumbers paire y.m & slice y.m thin put y.m into a little watter and lett y.m stew a little while y.n power it of & put to y.m a little grave onion & Jamiack peper beet Tops y.m thick with a little butter
