thick as one of yoe little fingers yn season ye Bacon wth Parsley winter savory sweet marjorum Time & onyon, shredd ym very small & put to ym a little Jamaica peper a little salt & 3 or 4 spoonfulls of vinegr. then put into it yoe Bacon, and mix it well all together, then Lard yoe beaf wth a dosen or more peaces of Bacon to every peace of Beaf through the midle wth a large laring Pinn & besure Lard it wth ye Grain of the beaf for it breaks ye Lard to doe it agst ye grain & it would not be tender if done so, Then yo must putt it into a Tin Pott fill it up wth veall or mutton broth till it be well coverd yn sett it over a slow fire and lett it Stew Close cover'd for 3 houres yn take a little fresh beaf and fry it brown wth butter but have a care it doe not burne, when yoe beaf is stew'd 3 hours take it out & put yoe broth yoe beaf was stewd in into the frying pann to yoe Gravy and lett it boyl a quartr of an hower, Dridge in to it a little floor to thicken it up yn pass it through a Haire sive into yoe frying pann
