49 Shrewsbury Cakes Take three grs of flower 1/2 lb of suggar 9 ounces of butter ( rub ye butter into ye flower) 2 eggs 2 spoonfull of brandy one nutmegg cloves and mace mix them and so worke ym all together and make it into cakes not too thick cut ym round and fried ym one the tops. 50 Apple Frutters Take 4 whites of eggs, beat ym to a high froth & set ym by, then take ye yolkes of three eggs & put ym into a bowle wth almost a pint of blew milk a little salt, beat yor milk salt & yolkes of eggs well together, then put in half a pound & half a quarter of fine flower well dryd Stir it very well in, and add three quarters of a gill of bottled ale and a little sack beat all these well, yn put in ye bett froth of ye eggs two ounces & a half of suggr half of a larg nuttmegg, so beat ym all very well together, then pair ye apple and scop out ye corre & cut in in thin selices casting ym in amongest yor battr so fry ym in renderd suett, don't fry too many at one time.
