Genger Bread Cake Dry three pounds of flour, mix with it one ounce of beat ginger, one ounce of carraway and one ounce of coriander seeds, finely ground make a hole in ye flower & put in four pounds of treackle add to it found spoonfulls of good yeast, and then melt a quarter of a pound of butter with half a gill of brandy mix it all well together and back it two hours with a good oven. This quantity will take a pound of orange skin & citron
