To Preserve Oranges to Lay in Jelly take Oranges, as Clear from Specks as you can, wash em and put them into a Kettle of water but it must boyle before you put them all in then Lett 'em lie till they are tender Set the water on the Fire and Let it boyle and then put them in again and Shift your water often till they are boyled Enough put them between a Linnen Cloath and cut of the tops and when your Syrup is boyled and Scum,d put in your Oranges between hot and Cold to Every pound of Oranges a pound and a quarter of Double refined Sugar and a pint of water let it stand 3 or 4 days till your syrup is thick then put to it some Jelly of pippins To make a White or Brown Jelly Take a quart of Milk 2 Raisees of Ginger an Ounce of Blanch'd Almonds beat em In a morter with a Little Rose water and Sugar to prevent their running to an Oyl take half an ounce of Iseing Glass steep In Rosewater all Night then take all the ingredients and put them together set them on the fire and put in a sprigg of Rose Water some sugar and Orange flower water season to the taste and when you thing it enough strain it in a basin and Glass it for Use Mrs. Cathe: Russell --1742
