32 Cook's Cakes Take six ounces of Butter, beaten till it is as thin as cream - one pound of Flour - six ounces of loaf Sugar - & half a pound of Currants - Dry them all well before the fire - Sift the flour & Sugar by degrees into the butter - adding the Currants at the same time - then add three eggs, well beaten - When well mixed, drop on Tins, in small cakes - & bake them of a light brown in a quick oven - Sidney Cakes. One pound of Flour - half a pound of Butter - half a pound of loaf Sugar - three quarters of a pound of Currants - and three eggs - Make up as above - Ginger Cakes. Mrs. Walcot. One ounce of powdered Ginger sifted - a quarter of a pound of Butter - half a pound of brown Sugar - 3/4 lb. of Flour - four tablespoonfuls of milk - Put the Butter, Sugar, Ginger, & Milk together into a Saucepan, & stir it one way until it boils briskly - then put it into a broad pan to cool, & when lukewarm put in the flour gradually, stirring all the time - When stiff, roll it out - cut into proper shapes - & bake in a quick oven for a quarter of an hour -
