Calfs Foot Jelly Put the clear stock of 1 set of Calfs Feet into a stewpan with a stick of cinnamon & 3/4 of an ounce of Isinglass, let it simmer till the Isinglass is disolved, put in three parts of a Bbottle of shirry and a teacupfull of Brandy the rind of 3 lemons which must be rubbed on some sugar and the juice of 4 or 5 lemons sweeten to your taste, just let it boil have ready beat 8 Eggs with the shells broken in with them, put them into the boiling Jelly and stir it all the time till it boils up then take it off the fire & cover it up put burning charcoal on the top of the pan & let stand a 1/4 of an hour then strain it, & first put in a 1/2 gill of cold water &c Mushrooms or Pancakes - Three Table spoonful of flour 1 do of powder sugar mix them with a glass of white wine, whisk the whites of two Eggs to a strong froth, mix them with the other ingredients, mix in a little cream to make them a little thicker than Pancake batter have ready a stewpan with boiling Lard. dip in your mould, make it hot then dip it into your batter then into the lard again let them be a light brown then lay them on a seive to drane ornament with sweatmeat
