Heart Soup Miss Yorker Cut your heart in pieces with some Turnip & carrot celery & onions pepper & salt, let it stew gently till the heart will pulp through the sieve thicken with butter & flour & season with cayenne - some people like it better without flour & stick the onions with cloves Lettuce Ginger Lady Burrard Take the stalks of white Lettuce that have run to seed peel them & cut them in peices boil them in clear water till tender. The lettuce stalks are to peel again after boiling in water before they are put into the syrup Prepare your syrup after the rate of 2 lbs of sugar to 3 pints of water boil it & skim it well, till quite clear, then put in the lettuce with an equal quantity of white Ginger boil it a few minutes & let it stand two or 3 day & so on till it becomes transparent it will take 3 weeks before it is done. The last time of boiling you must clear your syrup & if not strong enough, add a little more sugar. It must be well boiled put it into a Jar with the Ginger & tie it down with bladder boil the ginger first & change the water - To pickle Pork - Mrs. Robertson Cut your pork into such peices as convenient to lie in your Tub rub every peice will over with salt peter then take one part salt (Bay) & two parts common salt & rub every peice well lay the pieces as close as possible in your tub & throw a little Salt all over
