Raspberry Brandy Take about 3 or 4 Quarts of Raspberries, put them into a deep jug, pour on them 1/2 bottle Rum & let them stand nearly a week. Then put them into a seive to drain all night put about a gill of cold water upon the Raspberries by every of getting any juice that may remain & mix with the other liquor, then add a bottle of Brandy & stir in a pound of loaf sugar by degrees well pounded you must be careful not to put in the sugar all at once or it will jelly. If you put about 2 ozs: of bitter Almonds into half a bottle of Rum three months previous to making the Cordial it will be ready so much sooner for use Let it stand in the bottles three months. Then rack it off & add more sugar or spirits to your taste as you think it may require. Potted Beef. Put 4 lbs beef into an earthen pot with a few blades of bruised mace, a marrow bone & a pint of water. let the pot remain three hours in a hot oven; after which the beef & marrow, with as much of the gravy as you may require should be pounded in a marble mortar all hard & sinewy parts being previously removed then take 1/2 lb of Anchovies & after washing & boning them, let them be reduced to a smooth pulp with a little of the gravy that comes from the Beef. Season with pepper & salt & beat
