Transparent Paste Mrs. Hutton Marshe Hall Take 1 lb of flower well dried beat 1 Egg till it is very thin then melt near 3/4 of a lb of Butter without salt. let it stand till cold enough to mix with the Egg. then put it into the flower work your paste & roll it out thin When you are just going to put your tarts in the oven wet them with a little water & sift over them a little sugar Derbyshire Pudding - Miss J Tophan - Take a pint of milk & two table spoonsful of flower, mix by degrees, boil it till thick, & set it by till cold then add 3 ounces of Butter beaten to a cream, a quarter of a lb of white sugar, a little salt; the rind of a lemon grated, the yolks of 5 Eggs & the whites of 3; mix it thoroughly put a paste round the dish, & bake it, in a quick oven it is very good cold, the juice of a Lemon is an improvement - Potato Cake - Mrs F. Wyvill Take six Eggs 4 oz of Potato flower, Sugar equal to the weight of Eggs, the yolks of the Eggs, to be worked by degrees in a deep dish, with the sugar, which must be pounded very fine, then add the flour and work it well for 1/2 an hour, then add the rind & juice of a Lemon and the whites of egg beat to a strong froth - mix all lightly together, and put it in a mould which should be more than three parts full
