Rice Pancakes A pint of new Milk, two spoonfuls of ground Rice stir it over a slow fire till it is rather thick, stir in a bit of Butter, & grated nutmeg, when cold add two spoonfuls of flower, & 5 Eggs, sugar & salt to your taste, mix all well and fry them up - Maringues - Mrs Ward Half a pound of fine loaf sugar, or rather better boiled candy height till it cracks, and leave the pan the whites of 3 fresh Eggs, and the grated peel of half a Lemon, the Eggs must be beat to a very stiff froth as possible on a pewter plate, with a fork, mix a little of the froth at first, and then the remainder by degrees into the pan, it must not be over the fire when mixed or afterwards, drop them on white paper and bake them in a very slow oven - Maringues - Mrs. Windle a pint of spring water and half a pound of fine Loaf sugar, set on the fire, with the white of one Egg well beat to clear it - Beat up the whites of 5 Eggs fresh to a strong froth, and add to this while boiling, & let it boil a bout four minutes without stirring, then take it out with a spoon, and lay it on white writing paper, the size of little round cakes bake them in a cool oven, put them when cold two together with a little orange or apricot sweetmeat between
