Potatoe Pudding Take 8 oz of Potatoes boil them then grate them, put to them 4 oz of melted butter, let it stand till cold then add the Juice of 2 Lemons & grate the rinds 5 oz of sifted white sugar, beat up 3 Eggs with a little salt, mix these Ingredients together, & beat them up well, butter the Dish, & bake it 1/2 an Hour. For a small pudding half these Ingredients are sufficient
