Apple & Rice Pudding for Children Take a sufficient quantity of whole rice, that has been well boiled in milk & and an equal quantity of apples sliced & stewed, mix them well & when cold add the yolks of four eggs well beaten. Sweeten to your taste & boil it in a bason or mould or bake it if you chose Apple Compote Take a dozen or fourteen pippins, pare & core them, lay them in a stewpan not more than one deep, put in 5 cloves a stick cinnamon the rind of halfa lemon & three quarters of a pound
