Preserved Melon Take the best white ginger, soak it in warm water over night, the next day take it out, & scrape and wash it clean, then boil it tender and with that liquor make your syrup, skin, & peel the melon and simmer it in the syrup, continue to do this every day until it looks clear & bright then boil your syrup and ginger & your melon and when cold put it in jars
