To Make Stock for Invalids 1 lb of lean beef chopped quite small and put into a pint of cold water and let it simmer on a slow fire for 3 hours then strain it thro' a callender Plain Biscuits 1/2 lb flour. 1 oz butter. a pinch of Salt Enough cream or milk to mix stiff; then beat it well with a rolling pin. Roll out very thin Prick it all over,cut into shape and bake about 10 minutes Sponge Cake 5 eggs. Same weight in white Sugar Weight of 3 eggs in flour. separate the whites & yolks, beat the whites to a froth, put the yolks and the sugar in a Basin, beat them until they look like a cream, then add the flour, half the whites, mix well & add the remainder
