5 Minutes more, then pass it through a Tammy. Cut into small pieces some Calf's Head & feet, that have them dressed, put them into the Soup before serving. Raspberry Wine For a Gallon Cask take as follows. 9 Gallons of Raspberries, 8 ditto of Water 30 lb of Loaf Sugar. To every quart of well-picked Raspberries put a Quart of Water, bruise & let them stand 2 days - strain off the Liquor & to every Gallon put 3 lbs of Lump Sugar, when dissolved put the liquor in the Barrel & when fine which will be in about two months, bottle it & to each Bottle put a Spoonful of Brandy. It is as well to leave it longer than 2 months before bottling, as it will then be clearer. from Lady Vivian
