Toasted Cheese ([Chicer?] - 1874) Put some thin slices of cold Cheese in the Dish with the Heater & boiling water under/ and 1 tablespoonful of thick Cream and it will melt without any trouble, cover it up. Recipes to use up cold Mutton Potato [Cultets] Cut some slices of cold mutton spread mashed potatoes on each side flavored with salt and pepper and fry a nice light brown [illegible] the Potato Cutlets [round] some [illegible] of [illegible] or puree of tomatoes if in season Cornettes de Mouton Mince some cold mutton very finely as for [illegible] adding some thick sauce. Make some very thin puff paste roll out and cut into [illegible] in triangular shapes [illegible] a [illegible] of the meat one size of a [illegible] in each and roll up. Brush over with the yolk of an egg and dip in uncooked
