Poor People's soup Lady [Greville?] For whatever the number of poor families take 1 lb beef (the neck is best) & 3 or 4 lbs over for each family- To 80 quarts put 1/2 bucket split peas & a large garden bucket full of all sorts of vegetables well cleaned picked & prepared the night before- divide the meat into as many parts as there are poor families & continue to steam [thru] for about [7] hours. Cheap & thick broth for poor people 6 lbs of bacon cut very small, 2 cabbages 12 onions, 12 carrots all large but cut up small put all in a vessel & boil slowly for 3 hours & when nearly cooked add 3 lbs of rice previously boiled for 1/2 an hour (cost 2 1/2 heads for 26 persons
