"Les [Colottes?]" Butter the [colattes?] Pans. Put a little Cream with each, salt & pepper, Black, 1 Egg into each (taking away the stringy part) add a little more cream over the Eggs & a little Salt & Pepper. Then bake in a hot oven. A little grated Cheese may [illegible] be added. Lady F. [Last Name?] Fried Kidneys Skin the Kidneys cut them in Slices like Potatoes. Have a small Omelette Pan on the fire with a piece of Butter the size of an Egg. [Throw?] in the sliced Kidneys & fry over a quiet stove.
