[illegible] Sauce or Sauce Verte [illegible] Takea hand-ful of capers, ditto of gherkins, tarragon, & [chervil?]. [Chop them?] up very fine. Put salad oil, 1/4 pint of vinegar [flour?] pepper & salt to taste. Mix [these?] all well together. If tarragon & chervil are not to be had use parsley [instead] Take later with cold [fish?] hot or cold. A little spinach juice or a little of [illegible] green coloring will much improve the colour. Devonshire Cream [illegible] [Simmer?] new milk over a hot plate do not [stir?] or let it boil, but when it begins to bubble [illegible] & let it cool, then [skim?] the cream off. [A?] flat [plate?] is best to put the Milk [in?]
