An Almond Cake -- 25 Take 1 (dz?) eggs (illegible...of) out 6 of the whites - put them on the fire and [illegible]them till they are [milk?] warm take them off and whip it till it becomes thick and light Then Stir in 1 pound and half of lump sugar- [illegilble] watching it for half an hour then mix in half a pound of sweet Almonds / beat and Blanched 1 pound of flour and oz quartors of a pound of fresh butter. Likewise a dozn bitter Almonds beat to a cream, Season with Cinnamon and Ginger Put it on a Buttered Shape and set it in an Oven and when it comes out [stick?] it over with Blanched Almonds- Pancakes - Mrs M T - 3 yolks 3 whites 2 spoonfuls and half of flour milk till thin Batter - fry them as thin as possible without [burning?] them and [quite?] fair spread them over one on an other on an [illegible] [illegible] up -
