94 small [Beer?], and a Glass of Brandy pour this into the Shape and fill it up as the Bread soaks up the Beer. It will take nearly a Bottle - put the Shape into a shallow pan of water and Boil it two hours or till it is firm - taking care the water does not boil over into the pudding - French Bouillie & Soupe [Tahime?] - Put 5 or 6 pounds of Beef to as much water as will make a Tureenful of Soup when the water boils put in 2 or 3 Carrots 2 Leeks some parsnips - 2 or 3 Cloves [illegible] into a small Onion 1 [Turnip?] [illegible] a [burnt?] Onion - the whole to boil six hours, to be frequently stirred - If you wish to make [Tahime?] Soup Cut Turnips in small pieces Carrots onions Celery Leeks Lettuce - Sorrel and parsley - all cut in small pieces Wash the whole put the vegetables into a pan- heat them with the Soup which has been made as above Let them boil for an hour on a slow fire then Strain gently - Toast some thickish bits of Bread put them on a slow fire till the Bread [smells? swells?] then add the vegetables already prepared pour the above made Soup upon the whole and Serve - the Beef the Soup has been made of is very good - if dressed with vegetables - a piece of the H[illegible] [illegible] mealy -
