Sydney McCulley 134 as many parts as there are sandwiches roll each into a round ball and place one on the top of each sandwich about two minutes before serving put them into the oven let them be thoroughly baked. apple Chutnee Mrs St Wen[illegible] 4 lbs Sultana raisins chopped fine 4 lbs apple chopped do 1/2 oz chillies to be pounded 1/2 oz garlic 2 oz ginger 2 oz salt 2 oz mustard seed. These all to be pounded very fine 2 lbs soft sugar. Boil the apples well in one large bottle of vinager & then add above ingredients. Put one bottle of vinegar into the Sugar and boil it 2 a syrup, then mix all well together and boil the whole on a brisk fire for ten minutes.
