Stewed Pears To a 1/4 of a peck / or about 16 large ones, 1 quart of water - 1/2 lb of coarse sugar - 6 or 8 cloves and 4 to 5 grains of cochineal - Bruise the cochineal and pour boiling upon it, then add it to the sugar - Pair and half the pears leaving the stalks on & put them in a large brown jar, bake them for several hours but after they have once boiled then they must stew slowly. Mrs H Trevor Jany 28th 1865 Walkin Pudding on Marmalade 1/2 lb of grated Bread - 1/2 chopped Suet 1/2 brown sugar - 3 Eggs well beaten - 3 tablespoon full of orange marmalade - put the whole into a buttered mould & boil 4 or 5 hours Miss Jane [Dawbarn?] Feby 18 1965 Paradise Pudding 6 oz of chopped apples - 6 oz moist sugar 4 oz Butter 1 oz Lemon Peel (candied) 6 oz raisins 6 oz grated Bread 1/2 nutmeg - 3 eggs Mix all well together & boil 4 or 5 hours in a basin.
