Mince collops 1/2 lb beef minced (fresh) 2 small onions 1/2 oz butter or dripping 2 teasponfuls of flour 1/2 tea cup ful cold water 1 tea spoonful ketchup 1/2 tea spoonful ketchup, salt and pepper. Melt or warm the butter in a pan - put the meat in it, and beat it about with a fork or wooden spoon or beater till brown but not hard. Mix the flour with the water, add this & the chopped onions ( previously boiled) stew altogether for 1 hour, stirring frequently to prevent the meat going into lumps. A quarter of an hour before serving, add the salt pepper & ketchup. Serve hot & garnish with small pieces of toast. Many butchers will chop the meat for you. Flora C sent it from Scotland to MNF When roasting a hare fasten over its back tied on with [illegible] slices of fat bacon mix the force meat with egg & port wine. For 1 quart of soup break up 6 oz macaroni into a pint of boiling water, let it boil gently an hour A sharp apple boiled with tomatas may be used with them A bullocks "melt" for soup or gravy. Beef slices done with sausage meat egg bread crumb & fry
