Syrup of double refined Sugar & put in 3 or 4 Races of Ginger; put y.r Cucumbers into the Syrup & let them all dry; then boil them up again till they are crisp; let them stand a Week; then boil them up again & put them into your Pots. A Pint of Water to a lb of Sugar is a good Proportion - the Cucumbers should never boil in the Syrup, only gently green in the Salt & Water for 10 Hours - To preserve Cucumbers. Take some small Cucumbers & some large ones, let them be gathered in the dry, & some Stalks with the Blossoms to them; put them into a Stone Jar with Brine strong enough to
