To make Boullie Beef Take a Breasteut of Beef & put it into cold water, & when it boils scum it well & put into it all sorts of soup herbs & let it stew till done; shred some carrots & some celery & brown it a little. To make Pea Soup beef or veal & peas out into cold water; & put all sorts of soup herbs & when it is done strain it off & work the peas thro' a sieve; season it wth cayenne pepper to your taste & when you send it up to table put in some bread cut in square bits & fried nicely brown & some dried herbs.
