& when it is cold beat 12 Eggs & 4 whites; sweeten it to your Taste. Put in a Glass of Sack & Rose Water - then strain it The French Custard. Boil a Quantity of Cream & let it Stand 'till cold; then take the Yolks of 6 Eggs, a Spoonful of orange Flower Water; sweeten it with double refined Sugar; put it in your Dish & set it over a Saucepan of boiling Water; it will take two Hours in doing - whip up the Whites of your Eggs with Sugar & a Spoonful of orange Flower Water, lay it lightly over your Custard, when half done, sift some Sugar over it & brown it with a Salamander.
