APPLE LAYER CAKE. Beat the whites of one egg until light, but not stiff, then add little by little and alternately, one cup granulated sugar and one tart apple peeled and grated as it is added. Continue the beating in long, even strikes for 20 minutes until you have a white feathery mass that will hold its own. Spread between the layers of a sponge cake. Chocolate Nut Cake 1 cup sugar 2/3 " Butter 3 well beaten egg yolks. Add alternately 2 1/2 cups flour sifted with 2 1/2 teaspoons baking powder and 1 cup milk Beat stiffly beaten whites into the batter with 1/4 cup cocoa and 1 cup walnut meats (slightly floured). Bake in a shallow pan. Frosting 2 tablespoons butter 1/2 cup cocoa 1 cup powd sugar. 1/4 cup rich milk. pinch salt. Cook 5 min. Vanilla Beat till creamy. Cocoa Cake - One cupful of sugar, one-half cupful of butter, one egg, two teaspoonfuls of cocoa, one teaspoonful of cinnamon, one teaspoonful of cloves, one cupful of sour milk, one teaspoonful of soda dissolved in two tablespoonfuls of boiling water, two cupfuls of sifted flour, one cupful chopped nuts and one of raisins. L. M. H. ORANGE FILLING AND FROSTING. Orange filling-One cup of sugar, 1/4 cup of orange juice, grated rind of 1/2 orange, 2 tablespoons of flour, 1 egg slightly beaten. Cook 10 minutes in double boiler, stirring constantly. Orange frosting-Grated rind of 1 orange, 1 teaspoon lemon juice, 1 teaspoon alcohol. Let stand 15 minutes. Strain and add gradually yoke of 1 egg slightly beaten. Stir in confectioner's sugar until stiff enough to spread. Come again. Victorine Martland.
