into the mash tub before any malt is put in, then put the malt in & water, stirring well all the time until you have it at a consistency that the mash stick gently falls to the side of the Tub, then add, the covering of dry malt, & cover up for an hour & half before you let off very gently, when the liquor has nearly run off, add more hot water, & let it stand on for an hour, the next time you add water let it stand half an hour reducing the time until you have taken a sufficient quantity of liquor
