Pickle for Tongues. 2 oz Salt-petre, 1/4 lb coarse Sugar, 1/4 lb of Salt, Take the Tongue, prick it, but do not wash it then put a little salt over it, let is remain 3 or 4 days, then put it in the above pickle [wanned?] Ham Pickle 1 lb of Salt, 1 lb of coarse Sugar, salt-petre as much as you can lay on a sixpence, put the pickle on the Ham warm, If it is a small Ham let it remain in pickle 1 Month
