Steven Stepanian 2/24/15 Butchering. Sergeant [Aukel?] 30 Sept. Beef. The army beef supply comes from Australia. N.Z. and the Argantine. Hinds weigh between 120 lbs 210 lb. and fore quarters 170 lb - 200 LB average. [Chops?] round about 120 LB. In the Argantine hind quarters we get the Kidney. The Australian and New Zealand is sold as a by product. (Sold separately) When possible meat should be defrosted before being cut up
