40 Raspberry fritters Grate two Naples biscuits, and pour on them half a gill of cream boiling hot. beat the yolks of four eggs to a strong froth, and add to the biscuits when nearly cold, then beat both together very well, add two ounces of sugar, and as much juice of Rasberries as will colour it, and give it a proper sharpness, fry them as the other fritters, and when you dish them stick bits of citron & blanched almonds cut lengthways. Rice fritters Mix an ounce of flour of rice with a little milk & two or three bitter almonds pounded, sett it over a fire, and when well mixed, add a pint more milk, a little sugar, & candied lemon peel chopped fine, pounded cinnamon & nutmeg, keep moving it over a slow fire till it becomes almost a thick paste, flour a peal, pour it on it, & with a rolling pin spread it abroad, when cold cut it in bits, roll it, and fry it, strew some sugar on them. You may add Orange flower water in making.
