2) sides: when it begins to worke, put in 2 or 3 bottles of sack and one bottle of Rinish wine, the juice of 6 Lemmons, & some of the Lemmon pill, afterwards cover it cloase, & let it worke for a day & a night, then let all things be strained out, and put the Liquor into a Rumlet fit for the quantity you make, & after it hath stood 5 or six weeks in the Barrell draw it out into bottles, then Corke it well, drinke it in a moneth or 2 if you will it will keep above a year. How to make Rasberies Wine Take a Gallon of the best sack you can get and put there to a gallon of the best rasberies bruised, put them int a stone jugg together, & stop the jugg very cloase with a Cork, & a leather lidd over it, Let it stand 3 dayes in a Cellar, then open it & strain it, & put to it a pound of double refined Sugar beaten fine, & Stirr it well together, then stop it up Cloase again, & let it Stand 3 dayes more, then Strain it thorough an a [potrise?] bagg & put it into Stone bottles & Stop them very close, &keep them very Coole, it will keep all the year. How to make Goosbery Wine.Take your Goosbery's when they are ripe: Bruise them and put a quart of water to a gallon of Goosberys, let the water & the Goosberys be together a day & a night, then Straine them thorough a flannel bag (you may if you will put some fresh Goosberys & more water to it, & it will make a second wine) you most put a pound of fine Sugar fine beaten to every two gallons of wine, you most Stirr up the wine untill it be quite dissolved. Then put your first wine into your vessell If you will have it taste Like Rinish wine put a pretty deale of Clary into the vessell with your Wine it most be bottled in 14 dayes or 3 weeks How to make Cherry Wine Take 2 [Sives?] of Cherrys & stone them then bruise the
