[page number] of Salt. Cut yr beef according the bigness of the Collars. Take a Little cochnell, and bruise it with a Little alum and infuse it in a Little Clarett, and with a feather Sprinkle it over the beef. lay 12 Anchoveys, washed clean & boned in the beef it being thus Seasoned, then roll it up ery hard. tye it with a tape & put it in a Earthen pot, and put to it a pinte of [Claret inked out?] white wine, a Sprig of Rosemary, and Some bay leaves, Stop the pot very close with a Little paste and bake it with brown bread for 7 houres. when it is baked take it out of the pot and keep it drye Marrow Pyes. Take your Marrow & lay it in water to Soak out ye blood, then put in the yolks of 3 eggs boyled hard, quartered in & then sliced [dates?] and mace and SEason it with Salt, then close it up in fine paste orange of Lemmon Cakes. Take 4 Oranges and a Little one pare them very thinn, & boyle ym till they be very tender then drye it in Cloath and shred it Small and boyle a pd of Sugar to Candy. then put in yr pill, and the meat of yr Oranges, Sett it over the fire but not to boyle put it in a pott, & in 3 or 4 dayes lay it on glasses to drye
