Yeast. -Mine- pare 6 potatoes & put them in a pint of water to boil, add a 1/2 tablespoon white hops when the potatoes are mashed add 2 or 3 spoons flour & pour boiling water on the whole, mix them well & wen cold add a little yeast. Another. Mrs R pare boil & mash 12 potatoes - add 1 large cup full white sugar - 1 qt boiling water - when cool add 1 qt cold water - a half pt fresh yeast. keep in a warm place 12 hours - when it is ready for use - shake it before using.
