Calves foot Jelly. Mrs R. Boil 4 ft in 4 qts water - until reduced half & the meat cleaves from the bones - set away until next day to cool - scrape off the fat - warm the liquor & strain it, beat the whites & shells of 6 eggs - add to it 1 pt white wine - grate the peel of 5 or 6 lemons, add the juice free from seeds with a very little of the peel - sugar to taste - let it boil 1 hour when done the scum well separate - do not stir it after it begins to simmer - run it through a flannel bag. Apple Charlotte. Mrs. Perry Pare & slice a quantity of apples, cut off the crust of a loaf bread, - cut slices bread & butter Butter the inside of the Pie-dish & place Bread & butter all round - then a layer of apples sprinkled with lemon peel chopped fine & a considerable brown sugar, repeat until the dish is full squeezing lemon over the top, cover it to prevent burning - Bake 1 1/4 hour - turn it out of the dish.
